Wipe the top of the bottle and pour the Moet & Chandon carefully into sparkling clean, clear glass flutes until no more than two-thirds full and return the bottle to the ice-bucket. Coupes or 'saucers' should never be used as they allow the fine bubbles to escape too quickly. A standard bottle should fill up to six flutes yet a magnum not only fills 12 flutes, but is also the optimum size to allow the champagne to mature slowly, thus providing a touch more finesse.
