TASTING NOTES

 Colour:  Pale green.

 Aroma: Soft fragrant aromatic fruit, crisp and fresh.

 Palate:  Fine mousse, creamy and tight acid finish with great lingering fruit.

TECHNICAL NOTES

Region:  Margaret River

Vintage notes:  The 2011 vintage was characterised by a very dry winter and spring conditions combined with warmer than average temperatures during the ripening season. This has led to the earliest vintage on record, even surpassing 2007. Whites are very good, racy and flavorsome with fewer vineyards tending to overblown fruit as there were with some 2010 experiences. Reds are highly coloured, juicy and really deliver. It could be a classic vintage, however, it is absolutely outside anybodies experience, yet the signs are indeed promising.

Composition:  81% Chenin Blanc, 19% Chardonnay

Winemaking:  Picked in the cool of night, grapes were cold pressed and the clear juice fermented with natural yeasts.  Once secondary fermentation was completed, a small dosage was added to balance the dry wine.
