Made in Margaret River. The Cabernet and Merlot fruit for this wine was harvested in the cool of the night. Following crushing the fruit was fermented in a combination of open fermenters and sweeper arm fermenters. Just prior to completion of primary fermentation a portion of the wine was pressed and subsequently inoculated for Malo-lactic Fermentation (MLF). Completion of primary ferment and MLD was in predominately French Oak. The balance of the wine underwent extended maceration and spontaneous MLF before being transferred to French barriques. After fourteen months maturation, the wine was blended and lighly egg white fined before being bottled.
Colour: Deep red with purple hues.
Nose: This wine is a classic varietal example of Margaret River Cabernet, displaying some leafy edges with bright cassis berry fruit. The Merlot contributes plumy richness to the nose, with hints of spicy vanillan oak.
Palate: The palate of this wine is softly textured and elegant. The Merlot contributes to the structure with soft mouth filling tannins. Complex aromas lead onto the palate, resulting in a flavoursome, balanced wine with a spicy oak finish.
Food: Medium rare Scotch Fillet, on a bed of mash with spring fresh asparagus spears.
