This exceptional Cabernet fruit was picked in the early morning and then de-stemmed before being fermented on skins for seven days. It was then pressed and settled before going through malo-lactic fermentation. The wines were aged on a 100% French oak with each variety being separately treated until blending just before fining and bottling. The wine was fined withut the use of animal products.

Palate: Exotic compote of blackberry, juicy plums, and dark chocolate. A richly textured finish, well balanced with fine, soft tannins
