Bouquet: Juicy ripe blackberry, cherry and spice aromas of Shiraz mixed with mushrooms and violets of the cabernet sauvignon. Oak provides the toasty smoky notes to extend the complexity.

Palate: The palate has generous cherry and spice running through mid palate with soft finish, a well-structured wine with toasty oak providing for powdery tannins.

Food: Delicious with rare eye fillet, saltimbocca, roast kid, antipasto, lamb shanks, ravioli or veal casserole.

One year old French oak was used for the Cabernet and mostly 1 year old American oak and 2 year old French oak in the proportion of the Shiraz. This wine was meticulously blended to produce a uniquely Australian style red with great fruit characters. A touch of Merlot and Cabernet Franc was added to soften and round out the palate. The batches were fermented at temperature in mid 20 degrees to maintain the fresh primary fruit characters for the Moses Rock style. The wine was matured for 14 months in oak before blending and then left for another 4 months in oak prior to fining and bottling.
