VINTAGE CONDITIONS
2007 will be remembered for a few reasons; importantly it was a season which produced exceptional quality fruit, but also because it was the earliest vintage we have ever experienced in Margaret River. The early harvest followed a mild spring, and a relatively dry growing season, which produced good flowering and excellent fruit set.
WINEMAKING
The fruit was crushed, destemmed and chilled before pressing. The settled, clean juice was then fermented in stainless steel tanks. The final components are then selected and assembled prior to a gentle fining, stabilisation and bottling under screw cap closure.
