The wines bearing the Hill Smith Estate label are made from a quality estate vineyard owned by the Hill Smith family, in the Eden Valley region of South Australia. In this single vineyard the Hill Smith family grows the grapes to make the Hill Smith Estate Sauvignon Blanc.
Since its first release in 1981, Hill Smith Estate Sauvignon Blanc has earned itself a reputation as one of Australia's most awarded Sauvignon Blancs. Consistent quality over 19 vintages has seen this estate-grown wine from a single vineyard awarded no less than 7 trophies, 18 gold and 43 silver medals. A track record that speaks for itself.
The Hill Smith Estate vineyard always manages to grow dense, healthy canopies, which are perfect for shading the grapes during summer, resulting in the intense varietal characters and high natural acidity, so typical of the estate. The grapes are picked overnight in the cool, crushed and de-juiced quickly and then clarified. Aromatic yeast strains are chosen and cool fermentations result in lifted fruit aroma and flavour. 11% of the wine was fermented and matured in fine grained new French oak Barriques and Puncheons. This had added a subtle flavour, texture and complexity to the wine.
