Neutral oak was used to support the fine texture on the palate rather than adding too much oak influence. The resulting wine was held in barrel on lees for a period of time before a rough racking to bottle. Grapefruit and lime with layers of meringue and green apple skin and hints of ginger nutmeg spice. The palate is textural and zesty with a touch of brine. Stirring up the bottle before drinking will add body and texture.
